Bring the Perfect Dish to Your Next Potluck: Spinach Pasta Casserole with Pesto & Double Cheese

When a party, get-together, potluck or even a large family calls for food, some dishes just don’t cut it. If your looking for the ultimate dish that will entice your friends and family, then I have the perfect recipe for you! It’s Spinach Pasta Casserole with Pesto & Double Cheese. Try this simple recipe that yield enough servings to feed 8-10 hungry diners.

 

24 ounces spinach pasta

5 cups of roughly chopped fresh baby spinach

4 large chopped shallots (Any onion with suffice)

8 minced cloves garlic

3 ounces of shredded Asiago cheese

3 ounces of shredded Mozzarella cheese

8 ounces raw chicken breast (Optional)

1 cup Greek yogurt

1 cup cream (Optional)

1 cup basil pesto (Jarred)

1/2 teaspoon salt

Freshly ground black pepper

4 large eggs

Olive oil

 

Start off by preheating the to 350°F and lightly grease two 8×8 or 9×9-inch square baking dishes with olive oil. Baking spray may be used as well. Bring a large pot of water to boil over high heat. Add 2-3 pinches of salt into the pot. Then add the spinach pasta. Read instructions on the box, drain after, and set it aside.

 

While the pasta is cooking, toss together in a large bowl the chopped spinach, shallots (or any onion), and garlic. Toss with the asiago and mozzarella cheese and the chicken breast, if you decide to use it.

 

In a separate bowl, whisk together the yogurt and pesto. Stir in a bighearted quantity black pepper. Whisk in the eggs. Stir the cooked pasta together with the spinach and shallot, then pour in the sauce and toss to coat. Spread in the prepared baking dish.

 

Bake for 30 minutes or until golden-brown. After baking it, set it on a broil for an additional 5 minutes to create a nice golden crispy top. Let cool down for 5 to 10 minutes. Voilà! You have the best dish at the party and you’ll have your friends begging you for the recipe.
